Fettucine Boscaiola |

Ingredients -
5 teaspoons Unsalted Butter
4 Bacon strips, cut into small pieces
1 small Purple Onion, chopped finely
6 ounces Button Mushrooms, thinly sliced
1 1/4 cups thickened Cream
1/3 cup Fresh Parsley, chopped
1 pound Fettucine Noodles
Sa lt and Fresh Ground Pepper, to taste |

Preparation:
Heat butter in large frying pan. Add bacon and onion. Cook until onion softens, stirring gently.
Add mushrooms, cook until golden. Stir in cream. Bring to the boil. Reduce heat and simmer
until sauce reduces and thickens slightly. Stir in parsley.
Salt and pepper to taste.
Pour over boiled hot pasta and mix.
